    Thanks for the suggestions.  I was unable to find a Big Chef anything, apparently parts are hard to come by.  I did find stainless steel burner covers and used one and that worked.  I think I was also keeping the temp too low in the beginning.  At some point I will have to spring for that AMNPS...

    Hello From Connecticut!

    I packed the smoker full this afternoon.  Cassie gets the 6 huge chicken breasts and I get the 4 legs.  That's ok, I prefer dark meat.    My other 4 dogs were jockying for position to get scraps and to lick the cookie sheets I cooled the chicken on.  We all get some tomorrow for dinner.
