    Coconut Sugar Rub on Sockeyes

    Anybody else use Coconut Sugar as a rub for their Salmon? I just saw this and thought why not?? I generally always mop first then throw on a sugar based rub this time I used Coconut Sugar it came out very nice, a hint of coconut and not as strong as brown sugar which I usually use. Anyways...

    Smell that smell????

    I always wash the grates between smokes, but have one smoker for fish, cheese, brisket, pineapple, eggs, potatos it's all good.....Your item will be more impacted by 1) how you prepare it 2) how you serve it 3) the type of wood you use.......good luck

    Cheese Expiration Dates

    does smoking prolong the life of cheese? when I smoke cheese I sometimes keep it shrink wrapped in the frig for a year, probably well past the expiration on the cheese pkg. Should I freeze them instead? will cheese go bad after being smoked? Thanks for your help.....dave
