    First whole chicken is smokin'

    I regularly smoke whole chickens hanging in a net bag.  I brine them overnight then into the bag.  Hang and start the smoking.  My setup will have the chicken ready to plate in about 5 hours running at 235 degrees

    I think a real wood stove as a heat source is a great idea, and it sounds like your topography would make it a very clean setup. I'll be watching this build for sure.

    For a lid, you could get one from Bass Pro Shops, they have them for deer feeders.  excellent lid. http://www.basspro.com/American-Hunter-Feeder-Accessories-Easy-Open-Lid/product/35293/   And you definitely want to keep that bead.

    Just took the briskets off and brought them in ...... too big of a hurry so the picture is very bad..... Ill do another during the cutting and get better sharpness. All in all the net bags worked pretty good, one thing that is noticable right off is that they are much more uniform in shape...

    Hey there Chris. The basic structure is just a 3/4 plywood construction.  But the wife would not like a plywood box in the middle of the yard, nope not likely.  So I covered the outside with Cedar and stained it so it looks allot better.  The pic shows a propane take but thats been replaced...

    The short answer is yes.  3000 watts make more heat than 1500 watts does.
