    Thanks for the input.  I have a Masterbuilt 30" that i was going to smoke it in.  We'll see how it fits before i cut it up and will probably do a test run in the next week or so to see. You guys are a great wealth of knowledge!

    I've smoked quite a bit but i'm using an electric cabinet style instead of my offset for this smoke.

    Getting ready to smoke a brisket for Father's Day and the whole brisket (flat and point) won't fit onto one rack in my smoker.  Any tricks?  Just separate the flat and point?  Will cook times vary on both?  Looking for expert suggestions.

    Here is a picture of my smoker with a few questions.  In the bucket is a  few pcs of Apple wood that i was using to smoke a pork shoulder.  some pieces are smaller and some are a little bigger.  Should i be splitting them smaller?  How do i get a clean smoke and not the billowing white smoke...

    I have a Brinkman with a side wood box.  I used apple wood pcs  I cut them out of an orchard myself.  They are dried and the pcs range from 1.5" to 3 inches in diameter and about 12 inches long.   I smoked a 4 lb picnic and a 4 lb. boston butt.  i put them on at 5:45 am this morning and took...
