I'm going to s, oke three turkeys for family gathering, but I need to do the smoking on sunday. I'm thinking carve the birds and package meat only until Thursday, or tightly wrap in saran wrap and foil and reheat Thursday. Any suggestions or help ??
Any advise on smoking or preparing an injected bird? I'm under the impression any further brining will make it to salty. Any ideas on preparing it for the smoker greatly appreciated. Thanks
I smoked three 8lb. pork butts yesterday. Gave o e to my son in a lunch box cooler wrapped in foil at 200 deg. when he took it home. He forgot to put it in the refrigerator until this morning 10 hrs. later. Not very hot, he has no thermometer. Should he throw it out ??
I picked up a big center cut boneless chuck roast this morning for my first try at a chuckie.
I'm thinking of smoking overnight while sleeping. Plan to start and not check for 7/8 hours. With a roast this large at 225 to 250deg. I'm thinking I should be o.k.

I've got a siloin tip comming off the smoker in a few minutes. I want to hold for dinner in 2 to 3 hours. Should i put it in a cooler and try to keep it hot or cool it in the refrigerator and reheat the dinner portion later?
Just recieved new thermometer and tried it out. The problem is the range is terrible maybe 15 feet. Forget it if your inside trying to chek smoker. Anyone had this problem or is mine a defect?
Built a uds last weekend and seasoned it whith a 10 hour burn. This week trying a 9 pound butt I picked up. just applied rub and rewrapped for overnight.

IM gonna start a build tomorrow, I built my fire basket total height 12" . I plan to install a shelf for a water bowl 3" above that. My question is i would like to be able to smoke turkey without a dome lid. Is there enough room left for a shelf low enough for a turkey,has anyone tried it ?
