I think part of the UDS concept is to have the drippings fall into the coals in order to enhance, if anything, the aroma (and possibly the flavor?) when smoking. I would think since most of the drippings are from fat that they would burn up in the coals anyway...but I could be making things up...

I'm soooooo stupid for not thinking of that! We are actually doing a lab on metal reactivities next week in my chemistry class. I could totally use my hardware for it. That means I could buy the hardware and write it off as an 'expense' for school! Thanks for posting this!

Yeah...I went with the SS just to be safe as well. Lowe's had a decent selection of things. More expensive, but less guess work as to if it'll make me sick or not! Good Luck with your build!

Can this be used for smoking? I didn't see anything posted here about it. I read up on it and it said that the wood is light but strong and the fruit from the linden tree can bee used in as tea. Anyone have comments?

Yeah, the lid doesn't have a perfect fit so I'll have to come up with something. It fits good enough that it rests on the lip of the barrel so I may just take some pliers and bend the lip of the lid out a bit all the way around. I'll have to monkey with it a bit.
