    Were are is the main rot on the 850 ? Replacement parts for MB are pretty inexpensive. Granted, you shouldn't necessarily have to replace parts at the 3 yr mark but I love my 1050 and plan to add the new version as soon as I can locate the XT.     I prefer the HC for brisket but not the family as it is too peppery for them. I use the HG on beef and pork chops. The Gospel is a good all purpose flavor and yes HH is great on pork! Kosmos Q, Health Riles and Killer Hogs cam also be found at most WM around here. Keith

    Thermometer questions.

    I agree just try the biscuit test. Open a can of "whop" biscuits (that's the sounds it makes when you hit them on the counter🤣 ) and place them on the grate in rows. Gives you an idea of hotspots. And I love biscuits 😁 Keith

    You do not want crispy skin for KCBS or any comp. As @JckDanls 07 said , stay within the flavors of your region. Even more true if a local comp with local celebrity judges! Keith

    First KCBS and finishing mid pack is an accomplishment! Congrats! Not too bad for sure and as @thirdeye has said(and you know from your judging class) an 8 to a 9 is soo close. And I'm sure the knowledge gained will be put to use if you continue to enter the comps! Keith
