I understand that low and slow is the method agreed to by most. I also understand that basically, the overall cook time is largely controlled by the size/weight of the piece. That said, would cutting the whole piece (boston butt) into smaller chunks significantly decrease the cooking time?
Can someone who has tuning plates for their Brazos please tell me how long they are? I want to make sure they sit above the opening from the firebox.

I can’t figure out how to turn off the alarm on the receiver. The transmitter shows all alarms off but the alarm indicator on the receiver stays on and the alarms sound when the temps are exceeded. That’s not scoring me any brownie points at 5am while the rest of my family is still sleeping...
Got my brisket on the smoker and a new roll of butcher paper. Problem is that the paper is 18" wide. I know I ran across a technique showing how to wrap a brisket using 2 pieces of paper starting out in a sorta V-shape arrangement. Now I cannot find it, so, I need help!!!

So, when it comes to weekends, especially like the upcoming, I get the urge to put more than one thing on the smoker. Sometimes the guests may have dislikes of certain meats so I was thinking maybe trying to combine different meats that could be smoked at similar temps.

Ordered "butcher paper" from a local restaurant supply store and got Weston Coated Freezer Paper. I assume this is NOT what I want to wrap a brisket in, right? Can anyone confirm?
