    Need some ideas for some sort of shelter to keep rain/snow off my Rec Tec 680 whole smoking in the winter, my porch isn't covered. Also gets really windy up here on the mountain so needs to be very sturdy. Thanks Randy

    Bigger one was 7 3/4 hours and as much as I love sausage this one wasn't quite right. Very good but the one without sausage was better.

    Put on apricot glaze at 133 and 137, thought there would be a bigger difference on IT temp between the two. Tossed on the potatoes at this time.

    The big day is here. Got 2 loafs made, 1 at 3 pounds and the other at 2 pounds, the smaller one I left out the sausage. Dried out the pellets for the smoke tube at 200 for 1 hour in the oven. Using equal amounts of apple, pecan and maple Wrapped up some potatoes in foil. I'll get some pics...

    I did some 1/2 pound bugers with 100% mesquite in the Amazn tube, 1.3 hours at 235 with 160 IT. Added some chipotle bbq sauce at 145 IT then flipped and added more bbq sauce then pepperjack cheese added and melted at the end. Best burgers ever made. Can't wait to taste the meatloaf.
