    I myself would keep cooking til it comes up to temp, or get it close to temp then maybe wrap tjem in foil and a towel and put in a cooler and let it rest for a couple hours. But im a newbie so id get some more advice

    Gonna be doing a pork shoulder about 4.75 lbs. I have a masterbuilt sportsman elite electric smokehouse, was wondering generally how long that would take and how would I keep it moist without spraying it? Thanks fellas keep on smokin'
