    Well, you still have some time before dinner so I suspect the temp on the thinner side will run about 171/172ish, so the thick part should be coming out of the stall soon. (For me, I wrap at the stall and let it go)  Another 4/5 hours should just about get you there, then an hour in the cooler...

    If you have a minute, take a look at the Nomex "tape" that is used for the BGE.  I was going to use the high temp silicone, but it seems like that would always be sticky with the heat.  My SH44" had a lot of smoke coming out the door.  Put the tape on and no smoke AND the temp is rock steady...

    I've had my Smoke Hollow 44" now for about a year.  Love it.  Biggest change I made to keep the temp steady was to install the Nomex gasket around the door.  What a difference. Now holds temp rock steady.  Only issue is getting down to 225-ish.  For that I turn the burner down/off, until the...
