Thank you, Gwanger. They are my favorite over baby backs/pork. I pulled them at 198 and put them on a hot grill for about 15-20 minutes in an attempt to get some more crispiness on the bark. I hadn't done it before so I figured I'd give a try. Seemed to work.

Thanks, Challenger. I ask for them straight from the case before they cut them or package them. Typically the stores near me cut them in half lengthwise and sell them as half racks. I like them whole.
The boy turned 10 and asked for beef ribs for his birthday dinner. Ordered 29lbs and smoked them yesterday. Did them a few ways.

I've had my MES 40 Gen 2.5 for almost two months now. Since I started with it I've used the AMNPS with pellets and I place it right inside the MES on a shelf, under the drip pan. So far so good.
