    Boy's birthday beef ribs

Thanks, Chris. It was the largest amount of ribs I'd done. The MES 40 did a good job handling the task.

    Boy's birthday beef ribs

Thank you, Gwanger. They are my favorite over baby backs/pork. I pulled them at 198 and put them on a hot grill for about 15-20 minutes in an attempt to get some more crispiness on the bark. I hadn't done it before so I figured I'd give a try. Seemed to work.

Thanks Markh024. The maple honey rub is something I bought in a small mom & pops supermarket near me. They have it private labeled by a place in SC I think.

Thank you, Bear. This was my third time doing beef ribs. I used your step by steps as a guide while I'm still a greenhorn. :)

    Boy's birthday beef ribs

Haha. :) Thanks. I liked all three. The maple rub is something store bought. It's private labeled for the store. Rub is made somewhere in SC I think.

    Boy's birthday beef ribs

Thanks, Challenger. I ask for them straight from the case before they cut them or package them. Typically the stores near me cut them in half lengthwise and sell them as half racks. I like them whole.

    Boy's birthday beef ribs

The boy turned 10 and asked for beef ribs for his birthday dinner. Ordered 29lbs and smoked them yesterday. Did them a few ways. Two racks with A1, salt, pepper, and onion powder. Two racks with mustard and a spicy maple honey rub. Two racks with mustard and a sweet and smoky rub. Smoked...

Anyone use wood pellets in their MES?

I've had my MES 40 Gen 2.5 for almost two months now.  Since I started with it I've used the AMNPS with pellets and I place it right inside the MES on a shelf, under the drip pan.  So far so good.
