    1st burn in today. Getting all of the oils burned out. After 4-5 hours of that I will oil the grates and get them seasoned for about an hour or so. Then put on some chicken leg quarters.

    I hope it works great! Right now I have a one pc drip pan on the pellet side. I will see how that works first. If the doesn't work well I may remove it and put tuning plates in place of it. I can put foil over the plate if I want to run the pellet grill only. That is my thought today.

    That hasn’t happened to me yet. I’ve only ever had a pellet smoker. The offset is a new thing for me. I’ve seen this type made by a few builders, but I can’t spend 5,000 on one.

    I think the it is an either or. I guess if you had an all night cook you could start with the offset and then switch to the pellet for overnight to keep the cooking going. Then you can get some shuteye 😆

    Update on the build process. The hinges are on and the door is cut in. The firebox is mounted. I think the next thing I will do is make the base for the wheels. Then the firebox door or smoke stacks.
