    Make sure to leave enough time. Don't plan on having it at a specific time for dinner. Plan on having dinner when it's done. I use a MES and it always seems to take longer than I anticipate. Here is the first butt I did a couple weeks ago. Turned out delicious but patience was paramount.

    Turned out fantastic. Nice and delicious. Tasty, rich bark. Took about 9 hrs to get to 190 degrees.

    Hi all. Answering to roll call here. Got myself a MSE 30 w/ Bluetooth. Watching hockey and the temp on my brisket as we speak. The Bluetooth is nice. I'm in Colorado and new to the game. Clearly hit "the stall" on my first brisket and found the info on a thread here. Killing time while waiting...
