Thank you for the advice, I'll see what I can come up with.

Fluctuations lasted entire smoke. From what I've read its pretty normal for the probe on the grate to read a little hotter(anywhere from 15-50 degrees) than what the controller is set at. I guess it just is what it is. Once it was at temp (had controller set at 225)with the fan not running it...

Just bought a new Daniel Boone with Wi-Fi. Used it tonight for the first time and was curious on how close the temp on the controller was going to be with what the temp at the center of the grate was going to read. Honestly it was really close when I got it started and let it sit for about 30...

    Thermometer accuracy

I've been curious as to placement. When I've done pork butts I've hung the probe from the rack above whichever rack the meat is so it's just dangling above it. It just seems like it would be a little more accurate than laying directly on the rack but I have no idea. Maybe I put too much thought...

OK Thanks Jimmy! Does it matter weather it's to the left or right or behind or in front of the ribs? Any spot better than the other?

    Thermometer accuracy

Ya, right now the MES gauge says 225 and my thermometer I have in the smoker is sitting flat across the empty third rack which is under the ribs that are on the second rack from the top and above the empty water pan on the bottom rack and it's reading 196. Should I just leave that thermometer...

How accurate is the digital display temp on the MES 40 when it comes to setting the temp.I Have it set at 225 and normally have another therm in there too to kind of help. I've got a big rack of spare ribs going and don't know where a good place to put the other thermometer would be and be...

    New Guy MES 40

Mainly the amount of smoke coming out but I guess I was just expecting more than I should have. I've seen the cold smoke kits, hadn't done any research on them yet but good to know that's another option. Had to add chips about every hour or so like you mentioned so that was kind of a pain...

    New Guy MES 40

Received a MES 40 for Christmas. Never had an electric smoker before. I've seasoned it and smoked a pork butt so far. Obviously not impressed with the smoke output, used soaked chips and temp was about 230. I've read that I need the amazn smoker for good smoke output. Just wondering if there...
