    It's attempt was tasty,but had difficulty downsizing the recipe. Needed more bread crumbs and another egg, And fewer onions. Great first attempt.

    I too am attempting my first meatloaf in my MES 30" unit. Beef, sausage ,onion, mushrooms and spices with a BBQ/ketchup glaze. Using my aux slow smoker with mainly pecan and apple chips. Hope it's good!

    Well, I seasoned it last night, then ran a couple of pounds of cheddar for a few hours for its "shakedown" smoke. Here is my cold smoke set up. Temp inside was 50 degrees. 40 degrees outside.

    Jerky - Yoshida Style

    I am a big fan of Yoshida in my marinade mix. I usually mix 50/50 with soy salt and throw in some brown sugar and spices, and lotsa types of pepper. Good stuff , but not for wimps. My jerky bites back!

    Woodworkers Scrub Plane for wood chips feasable?

    Thanks Bear and Lance. That lil box is what I ordered with my MES 30" smoker. I ordered some chips in hickory and apple also. When those arrive I will see if I can produce my own chips from scraps on hand. With the scrub plane I can adjust the thickness and length.
