I have a MES 30 and use pellets in my AMNS. I have found if I dry the pellets out in my oven set on about 170 for 20 mins or so I have better luck with keeping them smoking. I have used hickory and apple flavors
Came out great, this is the second ham I have smoked and this one was better than the first. It took about 7 hrs too reach an IT of 150. I used hickory pellets and a glaze recipe from Bears Step by Step.
I had the same problem on my first attempt. What I have found that seems to help is to fill the AMNPS with pellets and then place them in the oven set on 200 for about 20 min. This will dry all of the moisture out, that the pellets absorb. (I crack the oven door for the last several min.) I...
I have only had my 30" MES for about 3 weeks but I am very pleased so far. I have smoked a ham, turkey tenderloins, deer jerky and a boston butt. All of them came out great.
