    I didn’t actually, but I used the instant read probe every now and then just out of interest and it seemed to be cooking pretty evenly all round

    Haha I forgot that’s just the British name, you can get cured/pre cooked but this was “green” (uncooked), it’s just a boneless “ham” I suppose, now that I’m comfortable with the temp control on the smoker I’ll continue with brisket next weekend

    Well… I had a little play with more rivets 😂 raised the rack up a tad, and added some lower little brackets for a drip tray/ heat deflector, sided over to the rhs. Will drill a hole in the rhs of the tray and it can drain into the small pan below. Will try and get a slightly longer tray on...
