    At 11:45 tonight the ITs were 103, 104, 106 and 106 again. The probe just slid through the brisket. I have it wrapped in a towel in an ice chest, and I plan on staying up to try it. I will let yall know how it turns out. I appreciate all of the input.

    The temp probe sure is sliding in pretty easy, but this is my first one, and I don't really have a feel for it. When I get all the way through the brisket to the bottom, it feels a little tough like it is a different texture right where the fat layer is. Is that normal?

    OK so every place I probed was 172 IT or better. I wrapped in foil and put it back on. I did notice in a few areas that the probe slid in really easy. Maybe that is a good sign?   I will pull it when all the IT temp readings are at 205. I have an ice chest waiting on it.  Thanks
