I haven't had any issues with not getting enough heat. This last go around, if anything, it stayed too hot for the first hour and a half.
I was able to keep the temp more steady this lat time, but I was adding unlit coals about every 1.5 - 2 hours to stay ahead of it.

That's the way to go. I'm no aficionado by any stretch. The COTM club is awesome though. $20 a month and you get 4 smokes a month that are usually worth 30 to 35 bucks. Great way to try new ones. That's how I got in to smoking heavier bodied cigars.

How often do you smoke? You want more budget, or do you tend to smoke on rare occasions, so you don't mind spending 10 or 12 bucks on a smoke?
Gurkha makes some great medium bodied smokes. 5Vegas is a great option.

For sure. I didn't have any cure to use and needed to cook this thing before it went bad. Also going to a birthday party in a bit, so if everybody has a few pieces that should take care of most of it.

So I actually had too much that I could fit on my smoker. I could technically fit it all, but I would have had too...
I don't have one of those boxes yet for the charcoal, so I built a pyramid and lit the top couple coals. Kept the smoke box vent mostly closed and temp got up to 300. Finally got down to 275 but took an hour.
Maybe I put too much coal in to begin with?
