Everybody always asks me how my jerky turns out perfect, everytime. The answer is always sodium nitrite (speed cure, pink salt, etc.). Where does everyone get there wood??
Tree Services are a good place to ask. I have two companies that know i will take any hardwoods, and they just dump it in driveway. kinda nice nice to come to home to new pile of plum or apricot! also some cabinet and door shops will give you scraps that work perfectly. yeah, horrible waste, but i like my dogs even more than that. its a shame these "sportsmen" dont understand. I process and jerky 5-6 deer every season, my fee??? Half the meat. been a beautiful system for a few years now and I get more venison than most hunters. unfortunately, some don't know...- rawbutah
