    The Incinerator

I know it is nothing special, maybe even humdrum. It however IS a smoker... well, kind of. It started out it's humble life as a smoker manufactured by a company in Georgia. The bigwigs, once cranking it up for the first time siad, "Wow! How underwhelming!" Now it was in no way the fault of the...

    First Jerky!

I just made my second round of jerky... turned out way better than the first - dried it out until you could build automotive body panels out of it the first time. OOOps! 5# of awesome top round jerky went to work and it lasted 3 days. Guess I will have to make that happen again soon. Congrats on...

    It's about time...

Seems that when smoking meat is on the line, everything in the world gets in the way of the progress for me. I am now seriously in the design phase and have collected up some stuff to get this RF build on the road. I have a 100 gallon tank (26"dia x 47" long) and I want to build a smaller...

    True cold smoker - Fridge

Well poop. Guess I kinda figured that was going to be the case. I know they are not real great for recovery speed which is why a remote smoke generator is used in most commercial cold smoke cabinets. Got a wild hair there for a moment. I am not a drinker and I am diabetic so filling that pig...

    Tools for the best results

Am looking at starting to set myself up for sausage and snack sticks but have no idea what the best route to go is. What is the best way equipment to get within reason for grinding and stuffing? I am starting to do some research on recipes and such but wanted to know what everyone is using for...

    project curing chamber

Screw the bearings. Have them install a fan blade then build a smoke box around it and you can have convection!

    True cold smoker - Fridge

I have a side by side fridge freezer unit that works great but is an ugly booger that doesn't belong in my house. Therefore, it will be going into the shed as an extra storage unit when I finally get my kitchen remodel project in full swing. I had thought about replacing the glass crisper shelf...

Is it "taboo" top discuss liquid smoke?

I think their would be more of an issue if liquid smoke was a chemical compound made up in a lab by some glue sniffing goof off. Liquid smoke is really an extract of the real deal and so it is still an element of what we all love and enjoy.

Is it "taboo" top discuss liquid smoke?

I know of a number of people that use liquid smoke in their brines and wet marinades for Q'd meats. I use it in beef stews where I use smoked beef. I also use it in smoked salmon chowder. Both meats were previously smoked but I wanted to kick that smokey goodness up a notch so I added some...

Later Teflon hello Cast Iron "Frying an egg in a Cast Iron pan"

I am a fan of CI but my wife mistreats it something fierce and makes it a bitch to clean. She will overheat food ( I will not say burns it when she is around because she might bludgeon me with the pan) and then let it dry in there overnight cuz she hates to do the dishes. I get stuck with it and...

    Who else stacks?

OK, I know this is an old thread but I figured I'd toss in my 2 cents. When I was involved with scouts, we did a big dutch oven cook out and we fed 250 hungry scouts out of just dutch ovens. We had 50 or so 12 and 15" cast iron ovens going, most stacked 5-6 high. Took 30 adults to keep it all in...
