    I have contacted Chris Cosentino about blanching the tripe to the desired tenderness, seasoning it and grilling and grilling it in the style of Mediterranean octopus recipes. He said he's tried it that style and that it's very good.

    Pastrami sausage? Anyone tried this?

    Been grinding my corned beef/pastrami spices for years.  Use it as either a rub or as a seasoning.  Don't have to worry about all the bits and pieces.
