    need help no smoke

First couple times with (analog) MES we followed directions and got next to no smoke. We are used to offset smokers. Did some research, and this works for us with our 30" analog MES: We don't soak the chips. Fill chip pan completely (pack it in). Put in smoker. Add hot water to water pan...

    Friendly Debate

We use pecan and hickory, since they're available. How's the pear? My aunt's pear tree is likely to lose some limbs this fall. Ice storms this winter did a number on the pecan trees, so we're using a bunch of it. We also have some black walnut but that will be an experiment.

Gazpacho -- easy recipe is put some bell pepper, celery, onion and cilantro...

    Cold smoke confusion

I've had a thought -- what about adding dry ice to the box -- how would that effect the smoke processes?

    Checking in, Thanks!

Thanks, MossyMO, the a-maze-n is one thing I've had in mind. This thing has a great gasket -- and I am concerned about airflow. There's the internal fan at the top, but I don't know how to disengage the compressor/evaporator part (which is what died). Hi, Gary, I'm just over the border, north...

    Checking in, Thanks!

Hi, I'm Metrakay from southeast Oklahoma. I grew up on smoked everything in Minnesota, but when we moved to Arizona, we pretty much stopped, mostly due to lack of free wood, I think. We liked mesquite for the grill but not the turkey. :grilling_smilie: I moved to OK a while back, my father...
