Not having to smoke all night would be pretty nice. However...

Good point about the towel. At one point the cooler will be getting less full. I am not even sure how full the cooler will be when I will load them with butts. We still have to decide how much to make. for that reason it might be wise to get 2x 50QT coolers instead of 1x 110QT cooler...?

It was still great. Very juicy. They just took a little longer than expected. They are on the smaller side. largest chicken I can get here is 1200-1300 gram (2.6-2.8lbs).
I doubled the recipe but used celery seed powder on accident. I am thinking of brining only for a couple of hours because of this reason. Doing two whole chickens. Did I screw up or worth a shot?
I found out they used a silicone based paint. The guy told me the paint will burn into the steel. I was wondering if I should still season the inside even though it's painted on the inside as well...

I just picked up my smoker and of course they did something not requested :) They painted the inside too. The paint they used is heat proof up to 1650F. Will that cause any issues?
