    Mavericks

I had spare ribs on all 4 racks, which is what started the quest.  A ten degree spread just seems large considering the relative small cooking area in a MES.

    Mavericks

I did spares rib today, but came up with a nagging question.  All variables were the same - here were the results: MES 30 generation 2 Bottom shelf temperature: 260 -270 ( figured it was due to proximity of coils and heating cylinder. Next to bottom rack: 230 - 239 Second from the top rack...

    mes accuracy

I'm two months into the smoke.  Just bought a Maverick 732.  The 733 apparently has two food probes and no probes for internal smoker temps.  Anyway, what an eye opener!  My MES30 was reading 240 and my Maverick was reading 216!  Changed temps and Maverick was always 20 -25 degrees less.  I'm...

    Smoke, vapor, condensation?

Thanks for the insights - I'm buying a Maverick tomorrow and will experiment with the pouch.  So much to learn.... so little time.

    Smoke, vapor, condensation?

No water in the pan.  Dry wood, not soaked. Vent is opened 2/3.  I have the 2nd gen. MES30 with integrated electronics.

    Smoke, vapor, condensation?

I put a pork shoulder in this morning at 7:10, adding a second wood tray of hickory/apple.  Had started a wood tray at 6:15 as smoker warmed up.  At 1:15 it appeared it was still smoking, with a nice continuous thin column of what I took to be smoke.  I finally opened the smoker to insert...

    Smoke and mirrors

No, not really.  Actually, I called Masterbuilt today and the representative said it's not unusual for a tray to last 2 1/2 hours.  I wish they would have put that info out instead of "add chips every 30 to 60 minutes."  She said I shouldn't have added anything until the first tray was totally...

    Smoke and mirrors

Yes, I turn it over.  I also completely clean the tray after each use. I guess with time I will figure out a system - it just threw me that identical conditions provided different results.  That's why I figured it must be the adding of chips before needed that was the cause of the partial wood...

    Smoke and mirrors

Hi all: Smoked some baby backs last week for the first time in my new MES.  Added wood chips (cherry) every hour.  The tray was full of black unburned chips upon completion. Today I did baby backs again (cherry), with the vent open exactly as it was last week.  The smoke from the original chip...
