This is my second try at pastrami. My first attempt was done using a brisket cut (2lbs) from the supermarket (quality wasn't so good and but it came out ok. I smoked it on a Weber type grill. I kinda botched this one as I was my first time using that particular type of charcoal...
thanks guys! sorry I just got back. been busy with work the past few days (really hate quarter ends). but i already have my brickets and grill ready. I should start smoking on monday. Should have been tomorrow but will spend the whole day at the wake park riding and shooting the folks there.
yeah, I sort of realized that as I was reading on the threads earlier. I didn't really think it through when I bought the brisket earlier. I just sort of went for it. I was planning to use this one
