    I have a problem of starting the smoker and it gets over 300 WITH the vent closed.  I use chunks on my smoker but the temp starts to drop (after a while) and adding one chunk seems to get the temp back up to or just over 300.  I mean, my Ribs have turned out fine (I guess it averages out lol)...

    Hi there, new to smoking.  Got a BBQ Pro (cheap end but my friend has one and it works very well for him) and starting up my smoker my temps run 350...I waited for my coals to turn white and then added 2 small chunks of hickory and the temp went up to 350 (from 220) Basically I am concerned...
