    Hello from Wilmington, NC

That sounds like an amazing time and thank you for the invite!  Wish I would have known about it sooner...we have plans that weekend!  I should have done my roll call intro sooner!  Can't wait to hear about this year's trip and will have to stay better informed for next year's!

    Hello from Wilmington, NC

Hey y'all!  My name is Rick, I live in Wilmington, NC and have been cooking on charcoal and/or wood grills and smokers of some sort for about 34 of my 45 years - learned grilling from my father, grandfather and uncle from 11 years old until my late teens when my best friend's dad introduced my...

Advice for pricing a pork butt "job"

Also to make yourself feel better, divide the "cost of materials X 3" (or 2 whichever you prefer) by the number of guests and see what the cost per guest is.  Then you can relate that to what a catered event might have cost.  Taking into account that your food will be much better than what most...

    Baby Backs for dinner

Ribs look delicious!  And I love my large BGE but not going to lie, I get a little jealous of that oval when I see Primo's!  Seems to fit ribs/brisket just a bit better...

    Sunday Brisket!

Looks delicious!  Nice work!  And it looks like you did a very good job of trimming the brisket before putting her to the heat.  That is one of my struggles at this point - trying for uniform consistency without taking off too much fat. I find it kinda like mudding drywall joints - I could keep...

3 fires in the new Okie Joe

I have pretty much decided this was the issue with my smoky ribs.  Several times I saw the white smoke and said to myself - that should be much more blue/clear than that.  Ribs were still all scarfed down but I know there is much room for improvement.  We are our own worst critics!

3 fires in the new Okie Joe

Preheating my splits - didn't think about that.  Guess I could put one split on the handle of the firebox lid each time I add a split.  Is that what you mean?  I don't have one of the flat warming grates/plates on top of my fire box.

3 fires in the new Okie Joe

Wanted to do a quick update on my experiences so far with my “new to me” original Oklahoma Joe 16” offset.  I have burned 3 fires in her to date.  A little detail on each below… The first burn was supposed to be a dry run.  After about 2 hours over 500 degrees (trying to clean her out a bit) I...

New to me - Old school Oklahoma Joe!!

Thanks for all the info gr0uch0! I have spent lots of time lurking on here and reading the mods when I was looking at some of the big box buys of cheaper models. In fact I bought one of the $138 (or whatever the clearance price was) Oklahoma Joe Highland's last fall at Wal Mart, brought it home...
