     Havent purchased the beef yet was thinking about maybe 15-20 % fat.

     Getting ready to attempt my first batch of summer sausage. Will be making about 10 lbs. would I use about 6 lbs. of beef and 4 lbs. of pork. Any thoughts would be helpful thanks in advance
