    I so want to do this - ABT's and Beef Jerky somewhat successful... Next Challenge - My All time favorite - Corned Beef, Pastrami, or Montreal Smoked Meat - What ever you call it, A Rueben Awaits!!! I post the reply so I can find this recipe easy - Sometime in July - we start - Looks awesome!

    Elk Jerky Again!

    I have used this recipe (smoking times and Hi-Country seasonings) 3 times.  1st time - Meat cut too thick... Second time, better, but still too thick... More like steak bites.  3rd time - butcher cut for me, but still too thick.  However, each time the smoke was right, the seasoning was right...

    Ok. I have two small pinks. After I figured out how to fillet I cut your recipe by 1/4. I hope I have enough dry to make the brine. Will keep you posted. Btw. Is smoke non stop. I have a MES 30. Just want to know if I need to keep adding chips. I am new t this. If you didn't figure that out yet.

    OK - Now you are testing my memory - I used Presidents Choice "Blue Menu" Pork Sausage - I cooked that first with S&P&Paprika- that was what the potatoe masher was for..Then set aside and let cool for a bit - Prepare other ingredients, then add cream chees to sausage.  Or it just melts away...

    So I forgot to submit Pictures - THey turned out well, and were a bit spicier than I thought they would be - I enjoyed them, but they caught a few people off guard with the Heat...Thanks for the cooking times "Smoke Blower"

    I got my smoker! Yeah. Put it together. Got chips. Did the three hour cure (while watching Star Trek - the original from 79 - so slow moving. To much artsy musical interludes). Enough of the review. I have my ABT recipe. I just need to know how long in the smoker. And finally how to re-warm...

    I learned a huge tip when pre-cooking sausage and ground beef, pork, turkey, whatever... The Potato masher is not just for Potatoes...
