    Cleaning smoker racks

I smoked some wings today and the racks and mats were a mess. I went looking for the Dawn Super Power Spray and my wife told me it was gone. Some years ago, someone here had recommended Dawn Super Power (or is it Superpower?) Spray as a great way to clean racks, etc. I searched for the post...

    POZOLE ROJO de POLLO

Looks great. Lately when I'm making chicken soup, I also add chicken feet for the stock. They have lots of gelatin and give you the nice mouth feel that you were adding the hocks for. I don't eat 'em, just cook the heck out of them to render all the gelatin. Was surprised to see that in...

Super Bowl Sunday - What's on your menu?

Thanks to this site, we're having lox with veggie cream cheese on pumpernickel, beaver tail, and chili. The lox recipe is the best I've found. The beaver tail is a few flank steaks that were marinated for 2 days, dried, cold smoked for a few hours, and then sous vide the next day. The chili is a...

    propane storage?

I did call my insurance agent (State Farm) and asked about coverage in case of indoor storage. Her response was "I hate to think of what's in my garage". She said that in my case it wouldn't be an issue. She mentioned that gas cans, cars, etc. are generally stored in the garage. So, I'll have to...

    propane storage?

That would explain why firefighters would be pretty upset when that stuff starts cooking-off while they're trying to put the fire out.

    propane storage?

I bought a searzall torch attachment to use on food that's been cooked sous vide. While looking at all the safety stuff (yeah, I had time on my hands), I saw the warning about not storing small 14.1 oz propane cylinders indoors. This includes attached garage, basement, or other parts of the...

Bag big enough for whole belly

At Home Depot / Lowes they sell "Ziploc Big Bags". They are in the area where they have storage bins, etc. They are 10 gallon bags. Supposedly, they are made out of the exact same material as the 2 gallon Ziploc bags that we all use. As someone pointed out, the bags are normally advertised for...

    Welcome to the New SMF!

Looks very nice. I'm sure it was a ton of work. The only issue I have is with Search. Searching for "lox", or "lox cold smoked" returns an error. Searching for "brisket" works fine. Thanks for nice new site.

    Link to "New posts"!?!?!

Is the Search feature working? I tried searching for "lox" and "cold smoked lox" and received an error message. Searching for "brisket" worked.

    Sour cream raisin pie

Chad thanks for posting that. I hadn't heard about using baking soda on a filling. Make sense I guess. I'm working on dropping a few pounds after the New Year so it may be a while until I get to try this. I certainly will though. Thanks for taking the time to respond....Greg

    Nitrites

No, I'm not going to rant about the normal nitrite topics.  In the mail yesterday I received the below offer to participate in a study on nitrite supplements. It's being done by the medical folks at the big state university down the road (CU). I was shocked. Based on the rants and raves you...

First time dry aged Ribeye with Mr. T's help

On the UMAi website (the folks that sell the dry-aged bags for steaks and charcuterie) they caution that the steaks will not cook the way non-aged beef will. They say that given the amount of moisture that has been removed, the steaks will cook faster than you may be used to. Also, that the...
