    So I'm about 6 hours into smoking a pork shoulder. I'm using indirect heat method in a CharGeiller gas/charcoal combo. (No side fire box). Temp has been around 260-280. I just checked IT and it's at 180, and I haven't wrapped it. The shoulder/butt is 8.5 lbs. this seems really fast to get to...
