    I had to crimp as well.  Wasn't bad just used a vise grip and barely had to crimp it in.

    I built this a few months ago.  I used high temp engine enamel for the paint however I think my can of yellow was messed up as it was runny and didn't stick worth a hoot.  I used automotive decals for the stencils.  It says got smoke? on the back.

    First Snack Sticks needs some advice!!

    I too had this same issue with my first batch of snack sticks and after reading all this I know I didn't get all the moisture out.  Mine also wouldn't get above 142 I believe it was checking with two different thermoworks thermometers.  I will have to try again soon letting them dry out longer...

    Meat grinder or sausage stuffer?

    I just started making sausage but use a Cabelas Grinder/Stuffer.  While it make take a bit more time I don't mind and the results have turned out excellent and I at most do 15 pounds at a time.  Last batch of brats was right around 10 pounds.

    I used a mixture of hickory and cherry. I will agree while they are good they aren't as juicy as other brats I've had.  Still very much delicious and they won't last long but next time I won't let them sit as long as I did.  Just didn't have much time from the time I got home from my judging...
