Hey Dave, you were right about the condensation. I didn't have a problem in warmer weather, but just the other day I did when I smoked some cheese. I took a paper towel to the cheese, and it tastes fine. I'll either put a top rack in it so I can place a pan there, or shorten the stack. Really...
Inside was already all metal, Steve. Didn't have to gut it. Ya those are oven racks. I cut them down and welded them back together. I have 2 more to do just for spares...
I'm pretty new at this myself, Gary. But, I would go with more heat. When it's colder, that hour and a half to reach that temp will take even longer, I would think. Looking good though!
This bird turned out MUCH better then the 1st. I'm thinking I might have had the heat too low on the 1st, also. The skin was crispy, and much juicier on this one!
Did another whole chicken last night. Turned out better then the 1st. Can't wait to finally score on a deer already, so I can start making jerky and sausage!!!
This is bird #2 that I'm smoking. #1 was alright, but still wasn't as awesome tasting as some of you make yours sound. Pretty sure it's because I didn't brine the 1st one. Wish me luck, because I have nothing else pulled out of the freezer for dinner tonight! :)
