    Got into Snakehead fishing last summer. Plentiful on the Eastern Shore. I was skeptical about eating them but did a little research and marinated (Italian Dressing) and cooked on a cedar plank on the grill. Was actually very tasty. Nice firm white flaky meat, you really do not need a cedar...

    I always insert mine in the beginning.  I do sanitize my probe by soaking it in 70% Isopropyl for 5 minutes and letting it air dry.  This will kill any bacteria that may be on the probe.

    Starting a batch. About 3 hours in around 145. Had some meat sitting on the side leftover...got some good spice ...should of made more for sampling.

    Got my Oklahoma Joes Smoker for Xmas and finally got it set up and smoking just in time for Easter.  Did some modifications that I research and started my smoker experience full blast with a ham, pork shoulder and ribs  Have a charcoal and gas grill also, so this smoker rounds out my outside...
