    Stainless steel cooking grates vs standard lang cooking grates

    I do not have a Lang but once i season them mine has never rusted , I just scrub the grates with a wire brush while still hot .

    they do offer a 1/2" fire box option that is a lot cheaper and I would think the thicker metal might be better . any thoughts good or bad ?

    getting ready to order a reverse flow smoker from Shirley Fabrication and they offer a upgrade on a insulated fire box and it is kinda pricey . does a insulated fire box really help that much ? the steel is 3/8 inch thick and would like your guys opinion , thanks .

    when i did mine i just bolted them down with stainless steal allen head bolts and nuts , never had any smoke leak out from there .

    Temp Problems

    i start with charcoal and then switch to all wood and also if temps fall you can use a angled head fan blowing towards the fire box holes . just do not put on high or your temps will really spike , kinda works like a bbq guru .

    i use a propane weed burner torch , lights the coals in less than a minute and really cuts my time down on start up .

    no you are not making it a reverse flow because you would haft to move the stack to the same side as the fire box for that work . the fire box side is so hot that the plates will heat up and direct the flow of heat under the plates , on my last two plates the last one i have spaced about a 1/4"...
