I am building a new UDS and I am wondering what I should use to fuel my smoker charcoal or lump wood? I have cooked on a Big Green Egg before so I am use to using lump wood but I have never cooked with charcoal before. What do you guys suggest I use on my UDS? I was thinking about using both charcoal and lump wood mixed in my basket along with my wood chips. What do you guys suggest I use?

For me, it depends on what temp I am trying to achieve. For 225* and up I prefer lump. For temps less than that I like to use briquettes. Try some different kinds and see what works best for you.

I tried Bridgeford Lump and didnt like it, I couldnt hold temp at all. Now I use Bridgeford Blue and hold 250* no problem. Gonna try some bigger hickory chunks they have at BPS, old school wood fire. I'm all for experimenting.
