My wife wants turkey for dinner! No, not that one... This one: I'm using my WSM 22.5, 15.5 brined gobler, kfb with kiawe and guava, spog w/ paprika, 280 degrees... Three hours in: Turkey is IT of 144 degrees. I also threw in a St. Louis rib marinated Hawaiian style (soy sauce, brown sugar, ginger, garlic and chilli flakes). Gonna be eat good tonite!!!
