Smokin' it in the Sierra Nevada...

Discussion in 'Roll Call' started by murman, Nov 24, 2009.

  1. Wow. What a site you folks have assembled. I have been lurking here for a few months and finally registered.

I have been grilling for several years. I grew up in Western Kentucky where Mutton is the BBQ. My first dealing with a smoker involved a R2D2 (a prototype ECB???) looking rig with a water pan. I have used Webers and small gassers to the point where nobody wanted them as a hand-me-down and worn out a Captn' Cook 5 burner gasser while living on Oahu (every day was a good day to grill). My current rig is a Char Griller Duo with a side fire box (SFB). Not perfect, but very handy with a side burner, three burner gas grill, charcoal grill and SFB for smoking.

I also built a UDS and have orders to build three more...

What I want to learn from this site is THE FATTY...

I have seen them, read about them, but have yet to make one. My wife just got back form the store with SAUSAGE!!! I gotta go!

Welcome Murman, nice looking back porch you have, a nice pair of smoker too.
From the look of things you definitely won't have any problem finding wood to burn.

Like the look of that fattie, how did you get those nice long slices of cheese?
    Good luck!
  8. Thanks! I am using mountain mahogany, a local wood, in the UDS. Hickory and pecan are the norm. My wife "cut the cheese", she has this Tupperware thing that shaves it off the block.
