My first attempt at making Bacon from a bellie didn't go to good.
I cut a 1 pound and a 11 oz piece off the bellie, did a rub, let it sit in the fridge for 6 days and rubbed and turned it dailey, I test fried a few slices and it was good but lacked a little flavor. This I figure is the fact that I only rubbed it with MTQ and brown sugar, anyway I smoked the 2 pieces and it turned out quite acceptable.
Then I thought I was ready to do the rest of the Bellie but things didn't work out as they should have.
I had a bad day at work, came home, I had the bellie unthawed so somthing had to be done with it, I cut the bellie into 4 pieces, and began to skin the rind off, My wife made a couple comments that didn't set well, and with me being in an already bad mood and her comments, plus the fact that skinning a bellie is not the most fun job I have ever done.
The bellie found its way to the garbage can, and I gave up on it.
I had entended to do a rub let it sit in the fridge for a week and cold smoke it. My german temper got in the way of all the good intentions.
I have read many peoples rave comments about Pops6927 wet brine and how good it is. I have looked and looked on here and have not found his recipe.
All I want is to get another Bellie and pops recipe for his wet brine and give making bacon another try, this time minus my bad temper.
