I have a new smoker...don't know anything about smoking

     Hello everyone. My name is Bill though I go by Gene Pool in the cyber world. I live in northeast Texas out in the bonnies where we raise cattle and grass for the cattle to eat.  I am supposed to be retired.  Recently at our county fair the local high school FFA class entered a smoker for auction, and ol' Gene Pool won it. The smoker is horizontal, made of two pieces of 3/8" thick, 22" diameter pipe, one piece being the fire box and the other piece (42” long) for the goodies. The thing weighs about 400 pounds…maybe more.  When I get ready to put it in the shop for storage, I use a tractor with front-end loader to lift and tote it.

     I know nothing about smoke or bar-b-que cooking--one could say I am as green as a gourd.  So be expecting some very amateur questions and comments. 

     I am not very good at posting pictures, but if all goes well two are shown below of the new smoker.

Welcome aboard, Bill.

We call smokers like that tank of yours "horizontal offset smokers" and there are many here who use them.

If you know nothing about smoking, you have come to the perfect place.  The folks here will have you smoking like a pro in no time!

I think you are gonna have so much fun with that thing that the cows are gonna think they are next.   

Take Jeff's 5 day E-course and start playing with the easy things: ribs-pork shoulder and the like.  If you like peppers they become even more amazing after a little smoke is applied.

Being in Texas you should have access to what us in the northwest only dream of getting ahold of.

Great score. Cant wait to see how things start turning out for you.

I know there are plenty of Lone Star Smokers on this forum I am sure they will stop by to say hey!

You are gonna love this place I can honestly say I have learned more on this forum than any other single resource.  
 
WELCOME from SOUTH TEXAS, (down on the Coastal Bend by Corpus Christi)

Something you might want to think about;

Try cleaning as much surface rust off the outside of the smoker, treat it with a good coat of Ospho (?), than a couple coats of Rustolium paint.  That should keep your newly acquired smoker around for a looooong time. 

Not sure how close you are to any body of water but, the HUMIDITY in Texas can be just about as deadly to metal as the salt air here in Rockport.

You will get MANY ideas from the SMF members, and GOOD advise.  So Read, Try, Tweak, and SMOKE ON!!!

Welcome Gene, that smoker looks like a beast! I suspect you'll be producing some quality BBQ on that in no time.
