Hello Again.... I am an amatuer smoker/griller living in Ontario Canada.  I have been working with Siemens Energy divisions for about 27 years and the last 7 years I have been working on a international projects through N/A and Europe.  In that time I work with some folks from Charlotte, NC and began to get back into BBQ and smoking.  I started to read allot and look for some equipment.

 I have had an old propane Weber and got into a Char-Griller and then moved into Bradley smoker.  I have looked into other smokers but at this time I am content with what I use and will likely look for something in the future.  At the present moment, I just added a 22" Weber Kettle and love working with it. I was looking at a La Caja China but started to question whether I would get to utilize it enough to justify the cost.  In the meantime I am looking to convert my Char-Griller over to a straight smoker and look at some of the information on the net for sealing, baffle plates and tuning plates. A friend has advised me that if I need oak to come and see him.
