Healthier Grilling

  1. Saw an article that I figure some people might find interesting, although I do not want to follow some of these tips like precooking in the microwave and adding soy to my burgers:

    "These techniques retain the flavor that food gets when you grill it at high temperatures, yet lower the health risks associated with charred meat.

    1. Barbecue at lower heat. You'll create substantially fewer heterocyclic amines (HCAs), cancer-causing substances in meat grilled at high temps.

    2. Trim the fat. You’ll reduce a second cancer danger—flare-ups that deposit carcinogens called polycyclic aromatic hydrocarbons (PAHs) on your food.

    3. Flip burgers often. Turning them once a minute reduces HCAs.

    4. Grill meat (not pork or poultry) medium rare or less. This also cuts HCAs. Eating beef medium well or well done can more than triple the risk of stomach cancer.

    5. Microwave. Two minutes of precooking meat, poultry, and fish can cut 90% of HCAs. Finish on the grill.

    6. Marinate first. An hour in a thin marinade can reduce HCAs 57 to 88%.

    7. Flavor with garlic, rosemary, and sage. These antioxidant seasonings block HCAs and PAHs.

    8. Add soy. Mixing half a cup of textured soy protein with a pound of ground meat cuts 95% of potential HCAs in burgers."

    That's what McDonalds used to do to streach the meat, added soy filler. Just go with a good 80/20 or 85/15.

    So, i guess im just not cut out to grill healthy! Bottom line is its healthier than fast food or restaurant crap. Especially if you know where your food is coming from!

    If this way of preparing my food we kill me then I a goner for sure. Did you happen to read farther into the acticle where it said that breathing in smoke will cause your belly to grown and the development of another chin. Now for the smell of some good smoked meat sure makes me feel good if it's good for me or not.....

    I think it's a good article. The only thing I'll point out at the risk of flack from the audience is that the microwave has it's own effect on the food, and the soy is probably Genetically modified with it's own issues.

    I would just skip those steps.

    Actually, there is absolutely nothing wrong with eating smart mind you, even I have have cut down on butter, salt, etc...but I will never stop eating grilled meat completely. No how, no way, ain't happenin'. Need to keep some sanity if you know what I mean.
