G'day from Australia.

    I already posted in the roll call section, but figured that, since i do not know what i was doing, in regards to navigating this site, that the post probably got lost somewhere. Long story short, i wanted to learn the fine art of smoking, but have not a clue as to where to start. After reading some articles (and the e course), i decided to give it a go.....lol, from what I have read, some of you guys are going to have a chuckle. Ok, very basic smoker design (200 litre /44 gal drum cut in half, couple of bricks and a wire tray from an old camping stove), i brined the chook for about an hour in salt sugar and lemon juice, covered it in butter and dropped it on the rack. I just used regular barbecue briquettes, with sticks from a fruit bearing tree down the back yard. Now is the time for the chuckle......here are the photo's.

    The resultant bird was delicious, even though it was mostly guesswork (no thermometers, half assed approach to building the thing, too much beer while cutting the drum etc etc). But thanks guys, without your help, we wouldn't be having smoked turkey for christmas dinner [​IMG]

    I don't think anyone is going to chuckle. That may not be your standard commercial smoker, but sure looks like it turns out some tasty grub. You can learn a lot from that while working your way toward something else. Just keep reading and asking questions. Pick the forum that covers the type food you are interested in and ask away. Help will be along in no time.

    Welcome to SMF Dreegle. OK, I did chuckle a bit, but it's about results! Looks fine to me :{) Very ingenious!

    I do kind of worry about the paint in/on that barrel half. If you decide to keep using it, or build something more...err...orthodox, I'd burn it off. Even on the outside... not only don't you want to steep the bird in the fumes, you don't want to breathe them while tending said fowl :{)

    Seems a few Aussies have developed a taste for Q, eh? Cool!

    Besides that, it looks like it actually works ... [​IMG]

    If you have access to more drums, very decent smoker designs are available here. I'm sure a few members will be along with their expertise shortly.

    g'day mate!! boy we have truely gone International here at SMF. Great looking smoke, even down under. Of course your in the middle of summer, great time of year to smoke foods.
