Smoked my first rack ever last night. Baby backs. Went with a 1.5/1.5/.75 timing on them. Made my own rub, used beer in the foil, and sauce on about 15 minutes from the end. I was very pleased with the flavor and tenderness. I used apple pellets. Could have been better with a stouter smoke. Maybe a hickory or mesquite.

I didn't know about the foil trick the first time I made ribs...they came out way tough. Have been using foil since then.

BTW, did you not take them out of the foil and let them firm up in the smoker for 30 min-1 hr? I always do that, I like having a bit of a "crust" on there :)

These are some I made last summer, they were fantastic.
