Well here goes. I lit the little guy last night at 9:30 and let it season and run all night. While at breakfast with the wifey I suggested we stop at the store and pick up supplies. So now there is 2 over grown fatties and a beer chicken in the UDS. I see already that I didn't do it exactly right but what the heck. I've been doing these for years but never had filling in them and I just called them sausage. Of course I forgot the pics of work in progress until the end of prep. Here is a couple shots, and next spray I will snap one of the chicken while I am in there.
