First Butts on the Rec Tec

    I've had my Rec Tec for a few weeks now.  I decided on Friday to do my first butts on it for an overnight smoke.  I picked up two small butts (all they had - like they were cut in half almost).  Gave them a simple rub of salt, pepper, garlic powder, onion powder and at 7pm threw them on the grill at 200 degrees along with a ribeye and two hunks of tenderloin that I did a reverse sear on after an hour on the smoker.  Reverse sear was done an a blistering hot Charbroil Tru Infrared.  Steaks turned out great - different story though.  After I pulled the steaks, I bumped the temp on the Rec Tec up to 230 and went to bed for a while.

    I woke up at around 2:30am to an alarm on my Maverick letting me know that my butts were now at 160 degrees.  I put them in foil right after taking this picture and went back to bed again.

    At 6am I was again awakened by my Maverick letting me know that my butts just hit 200.  I pulled them off the grill and let them rest for about 2 hours.  At 8am I opened them up and pulled them apart.  Good smoke ring in my opinion, juicy and great flavor.  I typically use my own homemade pork / chicken rub, but using the simple rub allows me to use these in a lot more than just sammies.  I can put them in just about anything else and not have an overpowering rub flavor that some people do not like (I happen to like it, but I'm cooking for others too. . . . )

    I too own a Rec Tec and can not be more happy with the performance of the unit.  Nice looking smoke.

  3. How much smoke flavor do you get from your pellet grill? They sell the Green Mountains close to my place and was thinking about getting one. Would love to just set and forget

    If set at 225 or less, it gives a good subtle smoke flavor.  Over 250 there isn't a lot.  I like to put my Amazen tube smoker in the rear of the grill for a little extra smoke.  No pellet grill will give you stickburner smoke, but that isn't their intent either.  I get as much as I like with the addition of the tube smoker.

    Westby is correct, I smoke almost all my meats at 235.  My Rec Tec gives me the exact amount of smoke at that temp my family and I love.
