First Butt. Help!!

Ok, I am smoking 2, 7# butts for the 4th. Had em seasoned yesterday and threw them on at 4:00am this morning with a smoker temp between 225-240. After 5 hours the internal temp is reading 155ish on both butts. Is this cooking to fast? Suggestions much appreciated.
 
I started my 8# this morning at 3 and after 4 hours it read 153. Im pretty sure its normal to rise that fast and then it will start to slow down.
 
I charted the temps on the 8.5# butt I smoked yesterday.  Your temp at 5 hours seems inline, but I was cooking at 275-ish.  Here's my chart from yesterday:
  • 7 AM - 45 degrees
  • 8 AM - 55 degrees
  • 9 AM - 97 degrees
  • 10 AM - 127 degrees
  • 11 AM - 153 degrees (4 hours in, at 275-ish)
  • 12 Noon - 181 degrees
I wrapped my shoulder at 10:30-ish when it hit 140 degrees. 
 
The temp will quit rising as the "stall" happens....   Then you will wonder if they will ever get to finished temp......

What are you using to measure the temp of your smoker and meat? Have they been checked for accuracy? You should be fine, once you hit the stall you won't think they are cooking too fast. Lol. Are you going to foil?
