today i smoked a 8lb butt roast. i used hickory chunks for my smoke. i made Fla Jeff's finishing sauce to go with it. tastes yummy! here is the (food) porn. i rubbed it with mustard, and sprinkled with chili powder, garlic powder, onion powder, cajun seasoning, black pepper, and turbinado sugar last night- wrapping it in saran wrap to set in the fridge over night. the roast had a nice bark on it when i pulled it out of the smoker. i foiled it at 170Â° internal, and took it to 200Â° foiled. i let it rest for and hour and a half before pulling, and it was still steaming when i removed the foil.
